Is there a way to get a Dot Gain 5% or 0% when converting colors via /r/pdf

Is there a way to get a Dot Gain 5% or 0% when converting colors

Here’s the thing, for some reason I have a pdf document with tons of text, and some of it for some reason is in CMYK. When I convert colors on the print production tools, I select Text, preserve black, and the convert to profile dot gain 10%, the problem is that converted text goes to 97% Black, can’t get it to 100% black. Is there a way to get a dot gain 5% profile?
