To use Preview to insert your signature into a document, go to Preferences – > Signatures – > +. This will open up your Mac’s camera. Now, use a piece of paper to sign your signature and hold it up to the camera, aligning it with the blue line that you see on your Mac’s screen. Click accept and your signature will be accepted into your PDF document.
If you wish to digitally sign your PDF document, you can do that with Preview as well. To do that, go to Tools – > Annotate – > Signature – > and then sign your name using your mouse.

If you need detailed editing of your PDF files, your only choice is to go for paid software that will allow for OCR (optical character recognition). If you didn’t know, OCR allows your Mac to read and identify text characters on your PDF file, then making it editable.
